Holiday memory — Locro de Papa that transported me back
I first ate Locro de Papa on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the subtly spiced and herbal quality I remembered. choclo corn was handled correctly — something most restaurants here get slightly wrong.
llapingachos potato cakes are a highland staple tied to Andean agricultural tradition. It was the a Guayaquil ceviche bar memory that I was really chasing and this recreated it. canelazo hot cinnamon drink was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
