Cooking class experience — learning Ful Medames properly

I took a cooking class specifically to learn how to make Ful Medames correctly. The instructor explained why molokhia leaves is used the way it is — something I'd never understood from just eating it. The subtly herbal result when you make it yourself is different.

Egyptian cuisine is one of the oldest recorded food cultures, with accounts dating to pharaonic times. We learned how a Nile-side restaurant shapes the way this dish is eaten. The class ended with the meal and a glass of Egyptian Stella beer. I've made it three times since and each time it improves. Highly recommend the cooking class approach.
