Cultural discovery through Ayib
Ayib opened a door into a cuisine I'd previously known almost nothing about. The tangy from fermented injera flavours are unlike anything in my usual rotation and I mean that positively. Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. Understanding that context made the dish taste different — richer with meaning.
