Gored Gored opened a door into a cuisine I'd previously known almost nothing about. The tangy from fermented injera flavours are unlike anything in my usual rotation and I mean that positively. Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. Understanding that context made the dish taste different — richer with meaning.

I learned that mitmita bird's eye chilli is central to this cuisine's character, not just a seasoning. The an Ethiopian diaspora restaurant abroad setting was authentic and helpful for understanding what I was eating. tej completed the picture. A genuinely educational meal.
