Street food Injera — the authentic version
The best Injera I've ever had came from a street stall, not a restaurant. The intensely spiced and complex intensity was completely different — more direct and uncompromised. fenugreek was used without hesitation, the way it should be.
Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. The a communal injera sharing meal setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. tej was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
