Cultural discovery through Kitfo

Kitfo opened a door into a cuisine I'd previously known almost nothing about. The deep and earthy flavours are unlike anything in my usual rotation and I mean that positively. the Ethiopian coffee ceremony is a formalised ritual that can take hours.
