Holiday memory — Sisig that transported me back

I first ate Sisig on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the tangy and savoury from vinegar quality I remembered. patis fish sauce was handled correctly — something most restaurants here get slightly wrong.

kamayan feasts eaten with hands from banana leaves are experiencing a cultural revival. It was the a Manila restaurant abroad memory that I was really chasing and this recreated it. sago't gulaman drink was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
