I first ate Badrijani Nigvzit on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the nutty and aromatic quality I remembered. walnut paste was handled correctly — something most restaurants here get slightly wrong.

Georgia claims one of the world's oldest continuous wine-making traditions dating back 8000 years. It was the a family Sunday table memory that I was really chasing and this recreated it. Borjomi mineral water was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
