I spent three months trying every version of Sauerkraut I could find locally. The variation in quality is extraordinary. The best version handled sauerkraut with genuine knowledge and the smoky and satisfying result was noticeably superior.
German bread culture is extraordinarily diverse with over 300 officially registered varieties. The winning restaurant had the right a winter Christmas market feel — unpretentious and focused on the food. weissbier was suggested correctly. Worth the search. When Sauerkraut is made properly it's a completely different experience.
