Holiday memory — Goulash that transported me back
I first ate Goulash on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the hearty and warming quality I remembered. lard was handled correctly — something most restaurants here get slightly wrong.
paprika only entered Hungarian cooking in the 17th century but now defines the cuisine. It was the a lakeside restaurant on the Balaton memory that I was really chasing and this recreated it. Pálinka fruit brandy was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
