Töltött Káposzta as comfort food — exactly what I needed

Some dishes exist to comfort and Töltött Káposzta is absolutely in that category. The creamy and savoury quality works on something almost primal — you feel the warmth of it immediately. onion does work that no substitute can replicate.

paprika only entered Hungarian cooking in the 17th century but now defines the cuisine. There's something about the a traditional market stall context that reinforces the comfort effect. Tokaji wine alongside is the traditional way and it makes complete sense. I come back to this dish when I need something dependable and restorative.
