The best Butter Chicken I've ever had came from a street stall, not a restaurant. The warmly spiced and aromatic intensity was completely different — more direct and uncompromised. ghee was used without hesitation, the way it should be.
Indian cuisine varies enormously by state, religion, and climate. The a family home kitchen on a weekend setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. lassi was sold right next to it.
