Cultural discovery through Burekas

Burekas opened a door into a cuisine I'd previously known almost nothing about. The bright and fresh with herbs flavours are unlike anything in my usual rotation and I mean that positively. Israeli cuisine is shaped by Jewish diaspora traditions from across the world fused with local Levantine ingredients. Understanding that context made the dish taste different — richer with meaning.

I learned that Medjool dates is central to this cuisine's character, not just a seasoning. The a fusion restaurant mixing Mediterranean traditions setting was authentic and helpful for understanding what I was eating. Israeli wine completed the picture. A genuinely educational meal.
