Home cooking attempt — Jachnun from scratch
I spent an afternoon making Jachnun from scratch following a traditional recipe. Getting za'atar right was the main challenge — it's not as straightforward as it looks. The warmly spiced result was rewarding once I got it right.
Israeli cuisine is shaped by Jewish diaspora traditions from across the world fused with local Levantine ingredients. I served it with Israeli wine as the recipe suggested and the pairing made sense. It took longer than I expected but the outcome was genuinely satisfying. Making Jachnun yourself gives you a new appreciation for what goes into it at a restaurant.
