You can taste history in Sabich if you know what to look for. Israeli cuisine is shaped by Jewish diaspora traditions from across the world fused with local Levantine ingredients. The bright and fresh with herbs character reflects those layers — za'atar doesn't appear by accident; it came from a specific tradition.

The a Carmel Market street stall setting made sense of it. You understand the food differently when the context is right. Israeli wine alongside is part of that story. Some food is just fuel. Sabich, properly made, is something more. This version told the story well.
