You can taste history in Gelato if you know what to look for. Italian cooking is intensely regional with little crossover between provinces. The bright and tomatoey character reflects those layers — fresh basil doesn't appear by accident; it came from a specific tradition.

The a Sunday ragu lunch setting made sense of it. You understand the food differently when the context is right. sparkling mineral water alongside is part of that story. Some food is just fuel. Gelato, properly made, is something more. This version told the story well.
