Most people overlook how much the right drink changes Lasagne. I ordered it with Chianti and the bright and tomatoey elements of the dish sharpened considerably against the pairing. San Marzano tomatoes in particular became more prominent in a good way.

ingredient simplicity and quality are the guiding principles. The a family trattoria in Rome is where you learn these pairings — they evolved together. If you've been having Lasagne with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
