Cultural discovery through Escovitch Fish

Escovitch Fish opened a door into a cuisine I'd previously known almost nothing about. The rich and coconut-sweet flavours are unlike anything in my usual rotation and I mean that positively. Jamaican jerk cooking traces to the Maroon communities who preserved meat with allspice and chilli. Understanding that context made the dish taste different — richer with meaning.

I learned that allspice pimento is central to this cuisine's character, not just a seasoning. The a Kingston jerk pit setting was authentic and helpful for understanding what I was eating. sorrel drink completed the picture. A genuinely educational meal.
