You can taste history in Jerk Chicken if you know what to look for. Jamaican jerk cooking traces to the Maroon communities who preserved meat with allspice and chilli. The smoky from the jerk pit character reflects those layers — ackee fruit doesn't appear by accident; it came from a specific tradition.

The a family Sunday dinner setting made sense of it. You understand the food differently when the context is right. Red Stripe beer alongside is part of that story. Some food is just fuel. Jerk Chicken, properly made, is something more. This version told the story well.
