Best Miso Soup I've had — and I've tried a few

Having eaten Miso Soup at several restaurants over the past year, I can say this version is the best. The subtly sweet and salty quality is more pronounced here than anywhere else I've tried. sake is handled with real knowledge — you can taste the difference.

This is proper an intimate Tokyo counter restaurant cooking, not an adaptation for foreign tastes. green tea was the obvious choice and the combination was perfect. Japanese cuisine philosophy of shokunin craftsmanship shapes how even simple dishes are prepared. Would return for this dish alone.
