Best Udon I've had — and I've tried a few
Having eaten Udon at several restaurants over the past year, I can say this version is the best. The subtly sweet and salty quality is more pronounced here than anywhere else I've tried. dashi stock is handled with real knowledge — you can taste the difference.
This is proper a ramen shop at lunchtime cooking, not an adaptation for foreign tastes. green tea was the obvious choice and the combination was perfect. seasonal ingredients guide the menu in traditional settings. Would return for this dish alone.
