I spent three months trying every version of Chiles Rellenos I could find locally. The variation in quality is extraordinary. The best version handled epazote with genuine knowledge and the bright and citrusy result was noticeably superior.

Mexican cuisine is a UNESCO Intangible Cultural Heritage. The winning restaurant had the right a home kitchen on a Sunday feel — unpretentious and focused on the food. mezcal was suggested correctly. Worth the search. When Chiles Rellenos is made properly it's a completely different experience.
