You can taste history in Guacamole if you know what to look for. Mexican cuisine is a UNESCO Intangible Cultural Heritage. The deeply aromatic character reflects those layers — epazote doesn't appear by accident; it came from a specific tradition.

The an Oaxacan restaurant setting made sense of it. You understand the food differently when the context is right. agua fresca alongside is part of that story. Some food is just fuel. Guacamole, properly made, is something more. This version told the story well.
