First time trying Quesadillas — completely converted
I had never tried Quesadillas before this visit and I wasn't sure what to expect. The deeply aromatic taste hit immediately and made sense of the dish in a way descriptions never quite do. dried ancho chilli is an ingredient I'd not encountered used quite like this before.
The a home kitchen on a Sunday setting added something to the experience — this kind of food makes sense in that environment. pre-Columbian ingredients like corn, beans, and chilli form the foundation. My server recommended Mexican lager with lime alongside and it was exactly right. I've been telling everyone to try Quesadillas. Outstanding first encounter.
