First time trying Chhurpi — completely converted

I had never tried Chhurpi before this visit and I wasn't sure what to expect. The simply seasoned and clean taste hit immediately and made sense of the dish in a way descriptions never quite do. buckwheat is an ingredient I'd not encountered used quite like this before.

The a Newari restaurant setting added something to the experience — this kind of food makes sense in that environment. dal bhat power for 24 hours is a trekking mantra reflecting how central the dish is to Nepali daily life. My server recommended raksi grain spirit alongside and it was exactly right. I've been telling everyone to try Chhurpi. Outstanding first encounter.
