I spent three months trying every version of Sel Roti I could find locally. The variation in quality is extraordinary. The best version handled mustard oil with genuine knowledge and the earthy and warming result was noticeably superior.

Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. The winning restaurant had the right a Sherpa kitchen in the mountains feel — unpretentious and focused on the food. tongba millet beer was suggested correctly. Worth the search. When Sel Roti is made properly it's a completely different experience.
