I had never tried Akara before this visit and I wasn't sure what to expect. The rich and earthy from palm oil taste hit immediately and made sense of the dish in a way descriptions never quite do. locust beans dawadawa is an ingredient I'd not encountered used quite like this before.

The a roadside suya stall at night setting added something to the experience — this kind of food makes sense in that environment. Nigerian cuisine varies between the Yoruba, Igbo, Hausa, and other ethnic culinary traditions. My server recommended Chapman cocktail alongside and it was exactly right. I've been telling everyone to try Akara. Outstanding first encounter.
