First time trying Egusi Soup — completely converted
I had never tried Egusi Soup before this visit and I wasn't sure what to expect. The rich and earthy from palm oil taste hit immediately and made sense of the dish in a way descriptions never quite do. crayfish powder is an ingredient I'd not encountered used quite like this before.
The a Nigerian restaurant abroad setting added something to the experience — this kind of food makes sense in that environment. Nigerian cuisine varies between the Yoruba, Igbo, Hausa, and other ethnic culinary traditions. My server recommended zobo hibiscus drink alongside and it was exactly right. I've been telling everyone to try Egusi Soup. Outstanding first encounter.
