I ate Suya at three different restaurants in the same week to compare. The results were illuminating. The use of uziza leaves varied significantly — only one got it right. The rich and earthy from palm oil profile should be consistent but interpretation differs widely.

suya spiced meat skewers are eaten across West Africa but claim deep Nigerian roots. The best version came from a Nigerian restaurant abroad, which felt authentic. Chapman cocktail was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Suya is larger than you'd think.
