Aji de Gallina as comfort food — exactly what I needed
Some dishes exist to comfort and Aji de Gallina is absolutely in that category. The subtly sweet with chilli heat quality works on something almost primal — you feel the warmth of it immediately. quinoa does work that no substitute can replicate.
Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. There's something about the a market anticucho stall context that reinforces the comfort effect. Pisco Sour alongside is the traditional way and it makes complete sense. I come back to this dish when I need something dependable and restorative.
