Finding the best Lomo Saltado in the city — a personal search
I spent three months trying every version of Lomo Saltado I could find locally. The variation in quality is extraordinary. The best version handled leche de tigre lime marinade with genuine knowledge and the subtly sweet with chilli heat result was noticeably superior.
Lima is considered one of the world's great culinary destinations. The winning restaurant had the right a Lima cevichería feel — unpretentious and focused on the food. chicha morada purple corn drink was suggested correctly. Worth the search. When Lomo Saltado is made properly it's a completely different experience.
