What sets Lomo Saltado apart is the handling of huacatay black mint. In lesser versions this is treated as a background note. Here it's central and the subtly sweet with chilli heat result shows it. I've started buying it to cook with at home after this experience.

Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. The a market anticucho stall atmosphere was right for this kind of food. I had cold Cusqueña beer as recommended and it matched well. If you want to understand what makes this cuisine distinctive, Lomo Saltado is the place to start.
