Cultural discovery through Lomo Saltado
Lomo Saltado opened a door into a cuisine I'd previously known almost nothing about. The subtly sweet with chilli heat flavours are unlike anything in my usual rotation and I mean that positively. Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. Understanding that context made the dish taste different — richer with meaning.
I learned that quinoa is central to this cuisine's character, not just a seasoning. The a Novoandino contemporary Peruvian restaurant setting was authentic and helpful for understanding what I was eating. cold Cusqueña beer completed the picture. A genuinely educational meal.
