Most people overlook how much the right drink changes Pollo a la Brasa. I ordered it with Pisco Sour and the subtly sweet with chilli heat elements of the dish sharpened considerably against the pairing. aji amarillo pepper in particular became more prominent in a good way.

Lima is considered one of the world's great culinary destinations. The a Novoandino contemporary Peruvian restaurant is where you learn these pairings — they evolved together. If you've been having Pollo a la Brasa with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
