What sets Pollo a la Brasa apart is the handling of huacatay black mint. In lesser versions this is treated as a background note. Here it's central and the subtly sweet with chilli heat result shows it. I've started buying it to cook with at home after this experience.

Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. The a Novoandino contemporary Peruvian restaurant atmosphere was right for this kind of food. I had Inca Kola as recommended and it matched well. If you want to understand what makes this cuisine distinctive, Pollo a la Brasa is the place to start.
