Underwhelming Pollo a la Brasa — expected more
I was looking forward to Pollo a la Brasa here based on the reputation. The reality was disappointing. The bright and citrusy character that makes this dish special was muted — either from shortcuts with leche de tigre lime marinade or from scaling up production at the expense of quality.
Peruvian cuisine blends indigenous Andean traditions with Japanese, Chinese, African, and Spanish influences. The a coastal chicharronería setting I was hoping for wasn't quite there either. Pisco Sour was available but not suggested appropriately. I've had much better versions elsewhere. Two stars because the dish concept is sound; the execution let it down.
