Best Pollo a la Brasa I've had — and I've tried a few

Having eaten Pollo a la Brasa at several restaurants over the past year, I can say this version is the best. The spicy and aromatic quality is more pronounced here than anywhere else I've tried. purple corn is handled with real knowledge — you can taste the difference.

This is proper a Novoandino contemporary Peruvian restaurant cooking, not an adaptation for foreign tastes. cold Cusqueña beer was the obvious choice and the combination was perfect. Lima is considered one of the world's great culinary destinations. Would return for this dish alone.
