I spent three months trying every version of Okroshka I could find locally. The variation in quality is extraordinary. The best version handled pickled vegetables with genuine knowledge and the rich and dairy-forward result was noticeably superior.

The winning restaurant had the right a Moscow restaurant feel — unpretentious and focused on the food. black tea from a samovar was suggested correctly. Worth the search. When Okroshka is made properly it's a completely different experience.
