You can taste history in Bak Kut Teh if you know what to look for. Singapore's hawker culture was inscribed as UNESCO Intangible Cultural Heritage in 2020. The deeply umami from prawn paste character reflects those layers — prawn paste hae ko doesn't appear by accident; it came from a specific tradition.

The a Michelin-starred hawker stall setting made sense of it. You understand the food differently when the context is right. Tiger beer alongside is part of that story. Some food is just fuel. Bak Kut Teh, properly made, is something more. This version told the story well.
