Cultural discovery through Char Kway Teow

Char Kway Teow opened a door into a cuisine I'd previously known almost nothing about. The complex and fiery flavours are unlike anything in my usual rotation and I mean that positively. Singapore's hawker culture was inscribed as UNESCO Intangible Cultural Heritage in 2020. Understanding that context made the dish taste different — richer with meaning.

I learned that lemongrass is central to this cuisine's character, not just a seasoning. The a Michelin-starred hawker stall setting was authentic and helpful for understanding what I was eating. fresh coconut water completed the picture. A genuinely educational meal.
