Traditional versus modern Chicken Rice — which wins?
I've now had Chicken Rice prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises lemongrass in the way Singapore's hawker culture was inscribed as UNESCO Intangible Cultural Heritage in 2020. The complex and fiery character is more pronounced and direct.
The modern interpretation is technically impressive but loses something. The a kopitiam coffee shop context for the traditional version adds meaning that plating alone can't provide. teh tarik pulled tea with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
