Finding the best Satay in the city — a personal search
I spent three months trying every version of Satay I could find locally. The variation in quality is extraordinary. The best version handled sambal belacan paste with genuine knowledge and the complex and fiery result was noticeably superior.
Singapore's hawker culture was inscribed as UNESCO Intangible Cultural Heritage in 2020. The winning restaurant had the right a Michelin-starred hawker stall feel — unpretentious and focused on the food. Tiger beer was suggested correctly. Worth the search. When Satay is made properly it's a completely different experience.
