Street food Gravlax — the authentic version
The best Gravlax I've ever had came from a street stall, not a restaurant. The clean and subtly sweet intensity was completely different — more direct and uncompromised. lingonberry was used without hesitation, the way it should be.
Swedish fika culture elevates the coffee break with pastries into a social institution. The a Swedish smörgåsbord table setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. light lager was sold right next to it.
