Street food Smörgåsbord — the authentic version
The best Smörgåsbord I've ever had came from a street stall, not a restaurant. The clean and subtly sweet intensity was completely different — more direct and uncompromised. dill was used without hesitation, the way it should be.
Swedish fika culture elevates the coffee break with pastries into a social institution. The a Noma-influenced Nordic restaurant setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Swedish punsch was sold right next to it.
