Finding the best Gua Bao in the city — a personal search

I spent three months trying every version of Gua Bao I could find locally. The variation in quality is extraordinary. The best version handled soy-braised pork with genuine knowledge and the comforting and warming result was noticeably superior.

Taiwanese night markets are a pillar of social life and street food culture. The winning restaurant had the right a Taipei night market feel — unpretentious and focused on the food. Kavalan whisky was suggested correctly. Worth the search. When Gua Bao is made properly it's a completely different experience.
