I made Lu Rou Fan for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The comforting and warming profile was the main talking point — no one had quite experienced soy-braised pork used that way before.
Taiwanese night markets are a pillar of social life and street food culture. I explained the a morning soy milk and scallion pancake shop context as I served it which helped people appreciate it fully. Kavalan whisky was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
