Holiday memory — Oyster Omelette that transported me back

I first ate Oyster Omelette on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the umami-rich quality I remembered. basil was handled correctly — something most restaurants here get slightly wrong.

bubble tea was invented in Taiwan and exported globally as one of the most influential food trends of recent decades. It was the a Taipei night market memory that I was really chasing and this recreated it. Kavalan whisky was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
