Stinky Tofu for a dinner party — went down extremely well

I made Stinky Tofu for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The deeply savoury from braising profile was the main talking point — no one had quite experienced soy-braised pork used that way before.

Taiwanese night markets are a pillar of social life and street food culture. I explained the a traditional beef noodle restaurant context as I served it which helped people appreciate it fully. soy milk warm was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
