First time trying Pad See Ew — completely converted

I had never tried Pad See Ew before this visit and I wasn't sure what to expect. The balanced between sweet, sour, salty, and spicy taste hit immediately and made sense of the dish in a way descriptions never quite do. Thai basil is an ingredient I'd not encountered used quite like this before.

The a Bangkok street stall setting added something to the experience — this kind of food makes sense in that environment. Thai cooking philosophy balances four key flavour profiles in every dish. My server recommended Singha beer alongside and it was exactly right. I've been telling everyone to try Pad See Ew. Outstanding first encounter.
