Assida as comfort food — exactly what I needed

Some dishes exist to comfort and Assida is absolutely in that category. The boldly spiced and warming quality works on something almost primal — you feel the warmth of it immediately. preserved lemon does work that no substitute can replicate.

Tunisia is the world's third largest olive oil producer and olive oil underpins the cuisine. There's something about the a family couscous Friday context that reinforces the comfort effect. fresh lemon juice alongside is the traditional way and it makes complete sense. I come back to this dish when I need something dependable and restorative.
